What better time than February could it be, with Valentines around the corner, to embark on a culinary journey together and feast around!
We all agree that Valentine’s Day is a time to show that special someone in your life how much you care, and what expresses that more than a well planned, elegant dinner for two? Anyone can make a reservation but not anyone could stay home and set a table for 2 can to show you really care.
(umm, a little suggestion) If you are setting the mood for love, then you should keep the meal light, the portions small, and surround yourself with scented flowers and candlelight. ( i am already feeling love is in the air. )
What flavors would be perfect for a Valentine date?
You can order the starter and the dessert and work on the main course yourself.
Here is a simple recipe to get you started for the humble Spaghetti.
- 1/2packet of spaghetti
- 2 tablespoons olive or vegetable oil
- 1/2medium zucchini, cut into 1/2-inch slices (1/2 cup)
- 1/2medium carrots, thinly sliced (1 cup)
- 1/2cup sliced fresh mushrooms
- 1medium onion, diced (1/2 cup)
- 1cloves garlic, finely chopped
- 2medium tomatoes, seeded, cut into 1-inch pieces
(salt and pepper to taste)
-Cook and drain spaghetti as directed on package.
-Meanwhile, in 12-inch skillet, heat oil over medium-high heat. Add zucchini, carrots, mushrooms, onions, and garlic; cook 5 to 7 minutes, stirring frequently, until vegetables are crisp-tender.
-Stir in remaining ingredients except for basil and cheese. Cook 3 to 5 minutes, stirring occasionally, until hot. Stir in basil. Serve sauce over spaghetti. Sprinkle with cheese. Makes about 2 1/2 cups sauce.
